Super Yummy Vegan Kale Salad
Ingredients
- 2 bundles curly kale, thinly sliced
- ½ red onion, chopped
- 1 cup raw cauliflower, chopped
- ½ cup cherry tomatoes, chopped
- 2 small Persian cucumbers, chopped
- 4+ tablespoons nutritional yeast
- ¼+ cup Goddess Dressing from Trader Joe's
- ¼ cup seeds of your choice (pumpkin, chia, flax, sesame, sunflower)
- ½ cup yellow bell peppers
Mix and Match from these additional Ingredients, choose 3-4 from the list. Adjust quantity as needed.
- 1 cup mushrooms, sauteed with herbs and balsamic vinegar
- ½ cup beets, chopped
- ¼ cup heart of palms, sliced
- ½ cup raw broccoli, chopped
- ¼ cup dried raisins (or dried cherries)
- ¼ cup sweet grapes, chopped
- ½ cup steamed carrots, sliced
- ¼ cup steamed peas
- 1 soft avocado, chopped
- ¼ cup canned corn
- ⅓ cup roasted or canned chickpeas
- ⅓ cup boiled lentils
- ⅓ cup canned artichoke hearts, chopped
- ¼ cup parsley, chopped
- ¼ cup dill, chopped
- 14 oz firm tofu or tempeh, in cubes (warm up / bake if desired)
- ¼ cup pine nuts or walnuts or cashews
Instructions
- Wash kale. Strip leaves from stems. With a processor or by hand slice the leaves into 1/8 inch (3mm) thin slices. The thinner, the better as it makes the kale more enjoyable to eat.
- Chop all your chosen ingredients, small pieces / slices, ideally.
- If using mushrooms: chop mushrooms, fry them in a pan with a little bit of olive oil. Add some onion salt from trader joe's or your favorite spices. May also add balsamic vinegar.
- Mix all leaves and vegetable / fruit ingredients. Then add seeds, nuts and dried fruit, if using.
- Sprinkle a generous serving of nutritional yeast over it.
- Add generous amount of Goddess dressing from Trader Joe's or your favorite dressing.
- Enjoy!
